Easy Bread

Realizing 1) how much artisan breads can cost and 2) how I keep baking supplies on hand anyway, and 3) how nice it is to know just WHAT is in your food, I’ve been learning how to make loaves of bread from our bread machine.

I COULD make loaves of bread by hand – I have a professional grade kitchenaid mixer that has more horsepower than my scooter, and plenty of people have made bread for generations…but I don’t really have the time to devote to full-on bread making. Arthur has had a bread machine for decades, so I finally swallowed my baking/domestic pride and found an easy bread machine recipe online.

Easy Bread Machine Loaf

Mix 2 1/4 t dry yeast in 1 cup warm water (110 degrees F). Add two generous squirts of honey, stir, and let sit for 10 minutes.

Dump 3 cups of flour into bread machine pan (I’ve been using 2 cups unbleached white flour and 1 cup whole wheat; you can experiment with other flours). Add 1 t salt, 1/4 cup vegetable oil and the yeast/water/honey mixture. Set bread machine to “white” loaf and let it do its magic!


Seedy Bread

Today’s loaf of bread included a mix of 1/2 c millet, 1/4 c chopped sunflower seeds and 1/4 c chopped pumpkin seeds. I added an additional 1/2 cup water but left the other ingredients the same. We’ll see if I got the ratios right. The housemates love their bread seedy, so hopefully it will turn out lovely!
